Job Description

We are looking for a small team of professional chefs to work for one of the countries most prestigious universities. The roles are challenging, rewarding and would suit chefs with experience in producing high quality volume food. Operating over seven days the main refectory was recently refurbished and provides a wide variety of foods and beverages ranging from sandwiches and snacks to main meals starting with breakfast right through until an evening service for both students and staff. In addition to the above the refectory converts in to one of Leeds premier banquet venues with the capacity to provide a high quality sit down meal for 600 guests. Successful candidates will need to be flexible to cover the universities operating hours during the academic terms. Outside of the academic terms, holidays may be taken and other work provided to fill the gaps.

Working Hours Sat & Sun 08:00-15:00 Term Time

Main Duties

Preparation, cooking, display and service of all food items. Produce adequate levels of food to ensure servery counters are kept fully stocked Food produced must be of the highest standard. Ensure all food items are labelled and stored correctly. Assist with food production in other Central Catering locations. Assist with counter service when requested. Advise service staff of dish description, including contents and portion allocation. Control stock on a “first in, first out” basis, assisting with the counting and recording of goods accurately on designated dates. Carry out any other reasonable request by Management. Monitor, control and accurately record all fridge, freezer and food temperatures, advising the Refectory Manager of any non compliance to legislation or procedure. Ensure equipment and areas used are left in a clean and tidy condition. Control and accurately record all food wastage. Monitor, record and implement corrective action when necessary, temperatures of all high risk food deliveries.
